Culinary Sunshine on a Bleak Winters Day

The weather here has been a little chilly and on a grey overcast day its good to come home to some delicious, warming comfort food. I love Indian food but to do it justice you really need time to allow the flavours to develop properly.

Fortunately I have the perfect quick and easy cheats recipe for Dahl. Apologies at this point for those who dislike short cuts – best look away now. Beautiful aromatic Dahl is like a little burst of sunshine with its warmth and soft yellow colour. While we are on the subject of aroma please be aware that the smell is quite pervasive and will linger faintly for days afterwards. Hope you enjoy this as much as we do!

Cheats Dahl

1 cup of red lentils in one litre chicken stock (you can use water) and bring to boil. Turn the heat down and simmer. In a frying pan gently fry one diced onion in some olive oil. Add 1 clove of finely chopped garlic and freshly grated ginger to taste. Cook until soft and golden. Add 1 tablespoon curry paste and cook until fragrant (about 30 seconds). Add onion mix to lentils and stock and simmer until thick and all the water has been absorbed. Eat and enjoy!
